Put the pastırma, or a spoonful of çemen, into the pan.
-
Chop the spinach and add it to the pan.
-
Cook for another 3-5 minutes, stirring now and then.5 min
-
Transfer the dish to a small tray and smooth it down with a spoon.

Open four hollows in the spinach and break the eggs into them.

-
Keep it in the oven until the eggs are cooked.
-
Take it out and serve it piping hot.
If you are going to use kaşar cheese, scatter it over the eggs before it goes in the oven. It can also be made without minced meat, with çemen alone; what really gives the dish its taste is the pastırma or the çemen, so do not skip it. You can cook it in a pan instead of the oven.
