How to make it
Open in kitchen mode-
Snap the heads off the prawns and take off the shells.
-
Clean the black vein along their backs with the point of a knife, then wash and dry them.
-
Sprinkle salt and black pepper over the prawns; mix them with the juice of a lemon and leave them for 10 minutes.10 min
-
Bend the head and tail ends of the prawns round and thread them onto the skewers.
-
Thread half a slice of lemon, half a bay leaf, a quartered tomato and green pepper between them.
-
Brush the skewers with olive oil and cook them over the fire, turning them, for 8-10 minutes, until the prawns turn pink.10 min
-
Serve hot with vegetable garnishes and slices of lemon.
If you overcook the prawns they go rubbery; take them off the heat the moment they turn pink. Do not eat the bay leaf, it is only there for its scent.
