Thai Prawn Soup

One of 18 versions of Karides (Prawns). The table below shows how their ingredients differ.

Ingredients

Servings 4 people
  • 150 gram prawns · medium
  • 200 gram cream
  • 200 gram milk
  • 100 gram grated coconut
  • 5 piece small shallots
  • 1 clove garlic
  • 1 teaspoon coriander · ground
  • 1 tablespoon soy sauce
  • 1 tablespoon caster sugar
  • 1 teaspoon hot chilli flakes · isot will also do
  • 10 piece peppercorns
  • 1 piece grated lemon zest
  • 25 gram butter
  • 2 slice white bread
  • 1 teaspoon salt

How to make it

Open in kitchen mode
  1. Shell the prawns while they are still raw.
  2. Put the cream and the milk in a pan and work them together with a spoon; add the grated coconut and the salt and bring it to the boil once.
  3. Take it off the heat and leave it for 30 minutes.
    30 min
  4. Chop the shallots and the garlic very finely.
  5. Pass the rested coconut milk mixture through a fine sieve into a pan. Press down on the coconut left in the sieve with your hand so that it drains well.
  6. Add the coriander, the soy sauce, the sugar, the hot chilli flakes, the peppercorns and the grated lemon zest to the milk.
  7. Turn the heat on; add the finely chopped onion and garlic as well and cook the soup for 10 minutes without letting it boil.
    10 min
  8. Add the prawns and keep it over a gentle heat for another 10 minutes.
    10 min
  9. Fry the white bread cut into cubes in butter until golden, scatter it over the soup and serve.
Tips

Do not let the soup boil; the cream splits and the scent of the coconut is lost. Pressing the coconut left in the sieve to squeeze it out noticeably improves the taste of the soup.
