White Bean Salad
One of 3 versions of Kuru Fasulye (White Bean Stew). The table below shows how their ingredients differ.
Ingredients
- 300 gram beans · dried
- 250 gram beef ham
- 4 piece potato
- 1 litre meat stock
- 100 gram beans · fresh
- 1 bunch parsley
- 2 clove garlic
- 2 tablespoon oil
- 1 teaspoon oregano
- 1 teaspoon salt
- 0.5 teaspoon black pepper
How to make it
Open in kitchen mode-
Wash the white beans and leave them overnight in the meat stock.
-
The next day, boil the beans in that stock for an hour and a half.
-
Lift the cooked beans out of the stock with a slotted spoon.
-
Pass them through a sieve to make a purée.
-
Boil the potatoes and purée them as well.
-
Cut the ham into small squares and sauté it in a little oil.
-
Boil the green beans, cut them small and add them to the ham.
-
Add the garlic and the other spices and cook briefly.
-
Mix the potato purée, the bean purée and the ham mixture together.
-
Add the remaining stock to this mixture a little at a time until it reaches the consistency of a thick mash.
-
Cover the top with finely chopped parsley and serve.
Do not add all of the stock; add it little by little, watching the consistency. Soaking the beans in meat stock deepens the flavour noticeably. You can use a food processor instead of a sieve, but the sieve gives a silkier purée.
