- 750 millilitre water · for the syrup
- 0.5 piece lemon · juice, for the syrup
How to make it
Open in kitchen mode-
For the syrup, boil the sugar, the water and the lemon juice together and let it cool.
-
Spread the shredded kadayıf out thinly and scatter the ground walnuts over it.
-
Pour the melted butter over it and stir.
-
Roll the kadayıf up and seal it with egg white.
-
Fry them in barely warmed oil on the hob until they are golden.
-
Drop the fried kadayıf into the cold syrup.
-
Once they have drunk up the syrup, transfer them to a plate and serve with kaymak and Antep pistachios on top.
If the oil is too hot the kadayıf burns outside and stays raw inside; fry it patiently in barely warmed oil. The syrup must be cold.
