How to make it
Open in kitchen mode-
Set aside a quarter of the kadayıf.
-
Grease the inside and the sides of a tray 28 cm across. Lay the remaining kadayıf so that it hangs over the sides of the tray.
-
Boil the milk in a pan with 6 coffee cups of caster sugar and the salt.
-
Dissolve the rice flour and the cornflour in half a water glass of water to make a slurry and add it to the boiling milk.
-
Cook, stirring constantly, until it thickens.
-
Beat the egg yolks, mix them with the orange peel jam and add them to the muhallebi. Carry on stirring and cook for another 2 minutes.2 min
-
Take it off the heat and leave it for 5 minutes, then tip it over the kadayıf in the tray and spread it out.5 min
-
Fold the kadayıf hanging outside the tray back over the muhallebi. Close the kadayıf you set aside over the muhallebi as well and leave it for about an hour to cool.
-
Scatter the remaining butter over the kadayıf in small pieces.
-
Put it in the oven and bake for 40-45 minutes, until the top is golden, then take it out and leave it to cool.45 min
-
For the syrup, boil the water, 4 coffee cups of sugar and the lemon juice. Once it begins to thicken, drizzle it over the kadayıf.
-
Serve sliced, once it has cooled.
Letting the kadayıf hang over the tray keeps the muhallebi from running out at the sides. This dessert is sliced once both the kadayıf and the syrup are cold.
