- half kilogram raw shredded kadayıf
- 250 gram butter · or margarine
- 250 gram pistachios · walnuts or hazelnuts will also do
- For the syrup
- 750 gram sugar
- 5 water glass (200 ml) cold water
- 1 piece lemon · small
How to make it
Open in kitchen mode-
Use a copper or aluminium tray with sides about 3 centimetres high.
-
First crumble and spread the raw kadayıf well with your hands.
-
Grease the tray with the 200 gram portion of the fat.
-
Divide the kadayıf in two and spread half of it evenly over the whole tray.
-
Press the kadayıf down firmly with another tray of the same size.
-
Spread all of the crushed pistachios over it.
-
Close the remaining kadayıf evenly over the pistachios.
-
Press it down again with the empty tray.
-
Bake at a moderate heat for about 20 minutes, until the top is golden.20 min
-
For the syrup, tip the cold water into a pan.
-
Add all the sugar and dissolve it completely in the cold water, stirring, without heating it.
-
Once the sugar has dissolved, bring it to the boil and squeeze in the lemon.
-
Keep the syrup over a low heat until you take the kadayıf out of the oven.
-
Pour the syrup evenly over the kadayıf as it comes out of the oven.
-
Leave it to cool at room temperature, then cut it into squares or rectangles and serve.
Crumbling the kadayıf keeps it from clumping and helps it bake through. If you bake it in a hot oven the top will brown while the inside stays raw. If you do not dissolve the sugar in cold water, the undissolved sugar sinks, burns, and the syrup turns bitter. The syrup is ready when you touch it with one finger, press it against another and it sticks. The lemon keeps the dessert from crystallising.
