How to make it
Open in kitchen mode-
Chop the leeks, transfer them to a pan and cook them in their own liquid over a low heat.
-
Take the pan off the heat; once the leeks have cooled, add the eggs.
-
Add the flour, the white cheese, the finely chopped parsley, the salt and the black pepper and mix with a fork.
-
Put the sunflower oil in a deep pan and heat it. Take up the mücver mixture with a spoon, drop it neatly into the oil and press it flat with the spoon.
-
Fry the mücver on both sides and lift them onto kitchen paper to drain off the excess oil.
-
For the sauce, put the sunflower oil in a pan and add the flour, stirring all the time.
-
Once the flour begins to turn pink, add the tomato paste. Finally add the crushed garlic, the sugar, the salt and the black pepper.
-
After a boil or two, take the pan off the heat, pour the sauce over the mücver and serve.
Cooking the leeks in their own liquid, without adding water, keeps the mixture from going watery. If the mixture comes out runny, add flour a spoonful at a time.
