How to make it
Open in kitchen mode-
Make the syrup first: boil the sugar, the water and the quarter lemon, then leave it to stand.
-
Mix the yoghurt, the olive oil, the lemon juice and the water in a bowl.
-
Break in the eggs and add the flour a little at a time until you have a dough as soft as pogaca dough.
-
Make 20 balls from the dough, cover them with a damp cloth and let them rest for 20 minutes.20 min
-
Roll the first 10 balls out one by one on a lightly floured surface, to the size of a serving plate.
-
Stack them, sprinkling cornflour between them.
-
Roll the 10 balls out together with the rolling pin until they are paper thin.
-
Lay the first 4 sheets in a well-greased tray, scattering crushed walnuts after every 4 sheets.
-
Roll the remaining 10 balls out the same way and lay them in the tray, scattering walnuts between them.
-
Heat the margarine until it is really hot.
-
Cut the pastry in the tray into diamonds.
-
Drizzle the smoking hot margarine over the top.
-
Bake in an oven preheated to 200 degrees until the top is golden.
-
Take the baklava out of the oven and leave it a while to cool to lukewarm.
-
Pour the lukewarm syrup over it, wait for it to soak in and serve.
The margarine must never be lukewarm; unless it is poured over smoking hot, the baklava soaks the fat up.
