Add the salt and 1 glass of water.
-
Knead until the dough turns stiff.
-
Cover it with a clean damp cloth and let it rest for 20 minutes.20 min
-
Divide the rested dough into 12 equal pieces, sprinkle cornflour over them and flatten them with your hand.
-
Roll the pieces out as thin as you can on a marble surface, sprinkling cornflour all the while.
-
Grease the tray well.
-
Lay the sheets in the tray one by one, brushing each with butter melted over a low heat.
-
Once you have laid down half the pastry, spread the pistachios evenly over the tray.
-
Lay the remaining sheets over the pistachios the same way.
-
Press the pastry at the edge of the tray inwards with the back of the knife.
-
Cut it into whatever shape you like with a knife: diamonds, squares or rectangles.
-
Pour the melted fat over so that it covers the pieces.
-
Bake in a moderate oven for about half an hour, until the surface turns orange.
-
For the syrup, boil the sugar, the water and the lemon juice down to a syrupy consistency.
-
Add the syrup, piping hot, the moment the baklava comes out of the oven, and leave it to cool.
