How to make it
Open in kitchen mode-
Knead a baklava dough with the sifted flour, the egg, the salt, the fat and enough water.
-
Roll the sheets out and stack them to one side, sprinkling cornflour between them.
-
Grease the tray and lay a sheet over it; trim the parts hanging over the edges to fit the tray.
-
Sprinkle fat over the first sheet, or rub it on by hand.
-
Lay half the sheets on top of one another this way, greasing each one and trimming the excess edges every time.
-
Spread 2 water glasses of walnuts evenly over the sheets once you are halfway.
-
Finish with the remaining sheets, greasing them as well; tuck the trimmed-off edge pieces between the sheets.
-
Heat the remaining fat, pour it over from the top and leave it for 15 minutes.15 min
-
Cut it into diamonds or squares with a sharp, pointed knife.
-
Do not drag the knife towards you as you cut; press down, keeping the fingers of your left hand close to the piece being cut.
-
Drizzle fat over the top and bake in a moderate oven until the surface is golden.
-
While the baklava is in the oven, boil 5 water glasses of sugar with 3 water glasses of water and skim off the foam.
-
Add the lemon juice, bring it back to the boil and leave it to cool.
-
Pour the syrup over the baklava, lukewarm, as it comes out of the oven.
-
Cover it with a larger tray and keep it covered until it has drunk up the syrup.
