-
Knead until you have a stiff dough.
-
Cover it with a damp cloth and leave it for 20 minutes.20 min
-
Divide the rested dough into 12 equal pieces, sprinkle cornflour over them and flatten them with your hand.
-
Roll them out as thin as you can on a flat surface, sprinkling cornflour so that they do not stick.
-
Grease the inside of a tray the size of the sheets.
-
Lay the sheets one by one, brushing melted butter between them.
-
Once you have laid down half the sheets, scatter the crushed pistachios over them.
-
Lay the other sheets over the pistachios, brushing butter between them as well.
-
Press the pastry left at the edge of the tray inwards with the tip of the knife.
-
Cut it into squares, again with the knife.
-
Pour the melted butter into the tray and tip the tray to drain off the excess fat.
-
Bake in a preheated moderate oven until the top of the pastry is golden.
-
For the syrup, boil the sugar with hot water and take it off the heat once it reaches a syrupy consistency.
-
Pour it over the baklava as it comes out of the oven and serve once it has drunk up the syrup.
