Classic Baklava

One of 10 versions of Baklava · the most complete write-up. The table below shows how their ingredients differ.

  • 4 tablespoon yoghurt
  • 1 tea glass (100 ml) olive oil
  • half piece juice of the lemon
  • half tea glass (100 ml) water
  • 5 water glass (200 ml) flour
  • For the filling
  • 2 water glass (200 ml) walnuts · crushed
  • For rolling out
  • 1 water glass (200 ml) cornflour
  • To pour over the top
  • 250 gram margarine
  • For the syrup
  • 4 water glass (200 ml) sugar
  • 3.5 water glass (200 ml) water
  • a quarter piece lemon

How to make it

Open in kitchen mode
  1. Make the syrup first: boil the sugar, the water and the quarter lemon, then leave it to stand.
  2. Mix the yoghurt, the olive oil, the lemon juice and the water in a bowl.
  3. Break in the eggs and add the flour a little at a time until you have a dough as soft as pogaca dough.
  4. Make 20 balls from the dough, cover them with a damp cloth and let them rest for 20 minutes.
    20 min
  5. Roll the first 10 balls out one by one on a lightly floured surface, to the size of a serving plate.
  6. Stack them, sprinkling cornflour between them.
  7. Roll the 10 balls out together with the rolling pin until they are paper thin.
  8. Lay the first 4 sheets in a well-greased tray, scattering crushed walnuts after every 4 sheets.
  9. Roll the remaining 10 balls out the same way and lay them in the tray, scattering walnuts between them.
  10. Heat the margarine until it is really hot.
  11. Cut the pastry in the tray into diamonds.
  12. Drizzle the smoking hot margarine over the top.
  13. Bake in an oven preheated to 200 degrees until the top is golden.
  14. Take the baklava out of the oven and leave it a while to cool to lukewarm.
  15. Pour the lukewarm syrup over it, wait for it to soak in and serve.
Tips

The margarine must never be lukewarm; unless it is poured over smoking hot, the baklava soaks the fat up.
