Böbrek (Kidneys)
Kidneys, Chinese Style
One of 19 versions of Böbrek (Kidneys). The table below shows how their ingredients differ.
Ingredients
- 12 piece lamb kidneys · trimmed of fat and halved
- 75 gram red wine
- 4 tablespoon cornflour
- 1 teaspoon salt · for the cornflour mixture
- 1 coffee spoon black pepper · for the cornflour mixture
- 6 tablespoon sunflower oil
- 1 clove garlic · crushed
- 2 piece green pointed pepper · deseeded and finely chopped
- 1 piece red bell pepper · pith and seeds removed, thinly sliced
- 1 dessert spoon caster sugar
- 1 teaspoon salt · for the sauce
- 1 coffee spoon black pepper · for the sauce
How to make it
Open in kitchen mode-
Mix the cornflour with 1 teaspoon of salt and 1 coffee spoon of black pepper.
-
Put the wine and the spiced cornflour on two separate plates.
-
Dip the kidneys first in the wine, then in the cornflour; shake off the excess. Keep the wine left on the plate.
-
Heat the oil in a large, heavy pan over a medium heat. Drop in the kidneys and fry them for 5 minutes, turning them, until they are pink.5 min
-
Lift them out with a slotted spoon, put them on a plate and keep them warm.
-
Leave 2 tablespoons of oil in the pan and pour the rest away.
-
Add the garlic, the pointed pepper and the red bell pepper and fry for 4 minutes, stirring now and then.4 min
-
Add the wine you kept, the sugar, the remaining salt and the black pepper, stir it in well and cook the sauce for 3 minutes.3 min
-
Add the fried kidneys, cook for another 2-3 minutes and serve at once on a warmed serving dish.3 min
Dipping the kidneys in wine takes away their sharp smell; do not throw the leftover wine away, it is what gives the sauce its taste. If you do not shake off the excess cornflour, the sauce goes lumpy.
