How to make it

Open in kitchen mode
  1. Slice the kidneys 1 cm thick.
  2. Put them in a medium bowl and add water until it covers them.
  3. Sprinkle the salt into the soaking water and leave it to stand for at least 2 hours.
    120 min
  4. Drain the slices of kidney and put them in a small pan.
  5. Add enough water to cover them and bring it to the boil over a medium heat.
  6. Once it begins to boil, turn the heat down and cook for 5 minutes.
    5 min
  7. Drain the kidneys and dry them with kitchen paper.
  8. Put the beaten egg on a plate.
  9. On another plate, mix the breadcrumbs with 1 teaspoon of salt.
  10. Coat the slices of kidney well, first in the egg, then in the breadcrumbs.
  11. Heat the margarine and the refined oil in a large pan over a medium heat.
  12. Fry the slices of kidney for 4 minutes, turning them, until they are deep golden.
    4 min
  13. Lift the kidneys out with a slotted spoon and put them on a warmed serving dish.
  14. Put the onion slices in the pan and fry them for 6-8 minutes, stirring, until they turn pink.
    8 min
  15. Lift the onions out with a slotted spoon and arrange them over the kidneys.
  16. Pour away the fat in the pan.
  17. Put the oregano, the remaining salt and the soured cream in the pan.
  18. Stir now and then, and take the pan off the heat as it begins to boil.
  19. Add the chopped hard-boiled eggs.
  20. Pour the sauce over the kidneys and onions and serve at once.
Tips

Soaking the kidneys in salted water for 2 hours takes away the sharp smell; skip this step and the cream will not cover it. Do not boil the soured cream, it will split. Served as a starter, or as a main course with vegetables.
