How to make it
Open in kitchen mode-
Put the slices of kidney in a heatproof glass pan.
-
Add the onion, the grated lemon zest, the salt and the black pepper.
-
Add the lemon juice, the spice bag and the wine.
-
Set the pan over a high heat and warm it, stirring now and then.
-
Once it begins to boil, turn the heat down and cook for 30 minutes.30 min
-
Meanwhile, melt the butter in a small pan.
-
Once the foam has died down and the fat is hot, add the mushrooms.
-
Fry them for 3-4 minutes, stirring.4 min
-
Take the pan off the heat.
-
Once the kidneys are cooked, stir the mushrooms into the pan.
-
Add the cream and stir.
-
Cook for another 5 minutes, stirring now and then.5 min
-
Take the pan off the heat, lift out the spice bag and throw it away.
-
Serve the dish in the pan it cooked in.
Served with mashed potato and sauteed green beans. Add the soured cream at the very end with the heat low; if you boil it, it splits. The spice bag is wrapped in muslin and tied, so that the parsley stalks and bay leaf do not end up on the plate.
