How to make it
Open in kitchen mode-
With a sharp knife, hollow out the slices of bread 1.5 cm deep.
-
Beat the egg and the milk in a deep plate.
-
Dip the bread in this mixture and set it aside to drink the mixture up.
-
Melt 2 tablespoons of margarine in a large pan over a medium heat.
-
Once the fat is hot, put in the salami and fry for 5 minutes.5 min
-
Add the kidneys and cook for 5 minutes, stirring often, until they turn pink.5 min
-
Put in the mushrooms and cook for another 3 minutes, stirring constantly.3 min
-
Add the lemon juice, the salt and the black pepper.
-
Turn the heat down, cook for another 2 minutes and take the pan off the heat.2 min
-
Put the remaining margarine together with the refined oil in a large pan and melt it over a medium heat.
-
Once the foaming has died down, fry the slices of bread for 4 minutes, turning them once, until they are deep golden.4 min
-
Lift the fried bread onto kitchen paper and drain off the excess fat.
-
Put the slices of bread on warmed plates, hollow side up.
-
Fill them with the kidney mixture from the pan.
-
Put the eggs on top of them and serve at once.
In the last step the source puts eggs on top of the bread but does not say how the egg is cooked; what is usual on fried bread is a fried egg. Do not leave the bread too long in the milk mixture, it falls apart. Served with red wine.
