How to make it
Open in kitchen mode-
Melt half the margarine with the sunflower oil in a large pan over a medium heat.
-
Once the fat is hot, fry the slices of kidney for 5 minutes, turning them.5 min
-
Lift the slices of kidney out of the pan with a slotted spoon, set them aside and keep them warm.
-
Add the shallots, the dry vermouth and the lemon juice to the pan and boil over a high heat for 5-7 minutes, until the mixture has reduced by a third.7 min
-
In a small deep bowl, mix the remaining margarine, the mustard, the salt and the black pepper together.
-
Take the pan off the heat and add the mustard butter to it in small pieces, stirring constantly.
-
Put the slices of kidney back in the pan and scatter the parsley over them.
-
Set the pan over a gentle heat, cook for 3-5 minutes until the kidneys are warmed through, and serve.5 min
Served with mashed potato and fried onion. Do not pour the mustard butter into boiling sauce; take the pan off the heat and add it a little at a time, or the sauce will split.
