Open in kitchen mode-
Heat the oven to 190 degrees.
-
Grease a small baking tray with 1 teaspoon of margarine and set it aside.
-
Put 120 g of margarine, the breadcrumbs, the mustard, the ketchup, the garlic, the salt and the black pepper in a medium deep bowl.
-
Mix them well with a wooden spoon.
-
With a sharp knife, slit the kidneys half a centimetre deep to make pockets.
-
Spoon the mixture you have prepared into the pockets you have opened.
-
Arrange the kidneys one after another on the baking tray.
-
Pour the boiling meat stock over them.
-
Cover the tray with aluminium foil.
-
Bake for 20-25 minutes.25 min
-
Take the tray out of the oven and remove the foil.
-
Lift the kidneys with a slotted spoon onto a warmed serving dish and keep them somewhere warm.
-
Tip the liquid left in the tray into a small pan.
-
Add the cream and cook over a gentle heat for 5 minutes.5 min
-
Add the cornflour dissolved in water.
-
Cook for 1 minute, stirring constantly, until the sauce is smooth and thick.1 min
-
Take the pan off the heat, pour the sauce over the kidneys and serve at once.
Taste the sauce and add a little more salt and black pepper if it needs it. Do not cut the pocket too deep; the filling spills out as it cooks. Served with a mixed salad and mashed potato.
