How to make it
Open in kitchen mode-
For the filling, trim the leeks and the spring onions and chop them very finely.
-
Peel the garlic and cut it into rings.
-
Chop the fresh spinach very finely, or the boiled spinach once you have squeezed it well.
-
Heat the olive oil in a wide pan.
-
Put in the chopped leek, spring onion and garlic and fry them.
-
Once the vegetables have softened, add the grated nutmeg, the chopped spinach, the salt and the black pepper.
-
Fry it once more, then take it off the heat and cool it on a wide plate.
-
In a deep bowl, mix the flour, the eggs, the milk and the salt to the thickness of boza.
-
Put a little margarine in a wide pan and heat it; take up the excess fat with kitchen paper.
-
Pour a ladleful of the crepe batter into the middle of the hot pan and spread it to the sides.
-
Cook one side well, turn it with a spatula and cook the other side too.
-
Put the cooked crepes on a plate turned upside down on the worktop.
-
Put the filling on the crepes and close first the long sides, then the short ones.
-
Put them in a greased glass baking dish with the open edges underneath.
-
Warm them in the oven before serving and serve hot.
Always let the filling cool; a hot filling softens the crepe and it tears as you roll it.
